I had no intention of this happening. In fact, I was avoiding it.

In my head, I thought I was doing pretty well. And then, one day, I stepped on the scale. WHAT?! FIVE POUNDS!!! How did this happen? I was so careful! And then I started thinking back. My daily morning exercises had been canceled because of snow, freezing weather, class parties, necessary errands or last minute shopping. My usual carefully planned meals were replaced by grabbing fast food meals while out trying to find those perfect Christmas gifts. Christmas parties and Christmas dinners always lead to a bit of over eating. And let's not even talk about the countless goodies our kind neighbors brought over, rich fudge, gourmet chocolate dipped pretzels, scrumptious sweet breads, every delicious Christmas cookie ever. It was just a taste here and a nibble there. But it caught up with me! There is no question, even when you try to be careful, the pounds creep up on you.

Now that the holidays are over, it's back to reality. If you're like me, one of your New Years resolutions is to eat healthier. Last night, we made dinner that is not only quick and easy but also healthy and delicious!

Here's what you need:

9-12 Eggs or egg substitute
Grated cheese
Chopped deli ham or turkey
Chopped veggies: like mushrooms, peppers, tomatoes, onions
Fresh spinach
Salt & Pepper

Preheat oven to 400 degrees. Spray muffin tins or place cupcake liners in your muffin cups. (I like to use the liners. Less mess!)

Crack eggs into a bowl. Beat eggs well and season with salt and pepper.

Place a few pieces of spinach in each muffin cup. Add chopped veggies. (The kids can add which veggies they like). Pour in eggs to almost fill cup. Sprinkle with cheese.

Bake at 400 for about 20 minutes until eggs are cooked through. Serve with salsa and fresh fruit. Makes about 12.

These are delicious and so easy! They are a quick go to when you just don't know what to make to eat. And lets face it, they are a great breakfast food too! I hope you enjoy this recipe as much as our family does and it helps you reach your goals to eat healthier this year!
